Goat Cheese Crostini


Not sure what has gotten into me, but this rainy weather has
me feeling all domestic and thangs! So naturally I stepped into my
apron (ha! who am I kidding, I don't own one of those) and got
down to business.

I love me a good app and I have been making this one
for years. It's deliciously simple even for the most
challenged of cooks!


Goat Cheese Crostini

Walnut Pesto
*2 cups of fresh basil
*2 cloves of garlic (you can use more if you'd like!)
*1/3 C. Chopped walnuts
*1/2 C. Parmigiano Reggiano
*Salt to taste
*1/2 C. Extra Virgin Olive Oil 

For Crostini
*French Baguette
*4 or 5 Roma tomatoes
*Small basil leaves for garnish

To start: Place basil and walnuts in food processor and pulse a few times. Next, add the garlic and parmigiano reggiano and pulse again. Slowly add the olive oil in a constant stream while the food processor is on. Add salt to taste.

Slice baguette on a bias and place in oven at 350 degrees to slightly toast bread. Next, using dental floss, slice log of goat cheese for thin even slices.

Assembly: Spread pesto mixture on baguette, add slice of goat cheese, slice of tomato and top with small basil leaf!

there's a lady that makes FRESH goat cheese at her home everyday and sells to a restaurant (only) - i go there all the time and buy some - it's divinely heaven - i can live off it!

I really enjoy Goat Cheese Crostini. I sometimes tell myself it is too sophisticated for a commoner like me but the taste always brings me back to it, it is that good. The beauty of it is the options available to you for topping with things like honey or figs or even roasted veggies. If you are looking to spice up your presentation, I most certainly would recommend edible colors for garnishes. Last week I was looking up the powder food color price online and was surprised that there are reasonably priced stuff out there!
