As much as I love to cook for my family every night, sometimes there's just not enough time to make a full on meal from scratch. And to be honest, most of the time by 4:00pm exhaustion from the day has set in and we are way too tired to go out to eat! I know, I know I've officially turned into a nana (also known as a parent to a toddler).
While out doing my grocery shopping one afternoon, I spotted the ahi poke and decided that I would try using it for tacos! It was seriously so delish and took all of 10 minutes to put together. Definitely a win and has since become a staple in our dinner lineup.

What You Need:
1lb. Ahi Poke (your local specialty market like Whole Foods or high end grocer should have it)
1 Large Avocado
3 Small Carrots peeled
3 Cucumbers peeled (we use persian cucumbers)
2 Green Onions
1 Handful of cilantro
1 Tbsp. Soy Sauce
1/4 Tsp. Sesame Oil
Ponzu Sauce
Sriracha
Flour Tortillas
Using a potato peeler, peel carrots and cucumbers to make thin slices and put in a bowl. Then add ponzu sauce and mix so that veggies are coated with sauce.
Heat a sauté pan and wipe with Olive Oil or spray non stick spray. You want to get a good and quick sear on the fish so make sure the pan is hot! Throw your fish in the pan and add sesame oil and soy sauce. Lightly sear so that fish remains rare on the inside. You will literally cook in pan for approximately 2 minutes if that! Remove from heat.
Now comes the fun part. Building the tacos! Take your tortilla and line the fish as your first layer. Next add cucumbers and carrots followed by slices of avocado. Add cilantro and top with sriracha and green onion! I always like to add a little extra ponzu right on to the taco as well.
